Tongding Oolong tea

Tongding Oolong tea is a partially fermented tea that is moderately fermented and moderately roasted. Because it is roasted, among Taiwan tea specialty flavor wheels it is in the category of Roasted Ball-Shaped Oolong Tea. Its production process is as follows: Fresh tea leaves undergo solar withering, indoor withering and stirring, panning, primary drying, mass-rolling, drying, and roasting. It comes in tight ball shapes, while the color is glossy black-green and the liquor color is bright golden-yellow. It has a rich fragrance with the aroma of the roasting fire, as well as a rich and mellow flavor, with a long-lasting aftertaste. Tongding Oolong tea was originally produced in Lugu Township in Nantou County, but the production techniques have spread to Zhushan Township and Mingjian Township in Nantou County and to other tea-growing regions in Taiwan.
